I'm over doing it on the Sound 5 battles. But I just saw Gaara fight Kimimaro, and it was awesome. I'll definately take Gaara in this, I'll explain why later.

Who is to say he can not trap both of them if they do split? Sand is everywhere. Also if Sakon dies and Ukon stays out too long won't he die as well?

indeed. that's why I want to ask something about their ability. sakon (or ukon, don't know which one xD) can get in someone elses body, but why is that useful anyway? Even if ukon would hurt that 'someone' in the meantime, he would also hurt sakon...
so, what's the point?

Ukon, Sakon usually controls the body. I wonder that as well. When Kiba stabbe dhimself, it hurt Ukon. But he said it was used especially for assasination. If Kiba stabbed himself and it hrut, then if Ukon stabbed them it would aslo hurt him.

Maybe once inside they do some type of jutsu.

blaaah I don't like techniques for which they never shows how it works... xD

Sakon and Ukon win this...I mean, once Ukon enters Gaara's body, Gaara cannot hurt himself because his sand protects him. Gaara will keep trying to hurt himself while Ukon kills him from the inside.
